A low carb alternative is zucchini (3.1g carbs per 100g) and trust me, it’s just as tasty as traditional hummus and it’s also perfect for the vegetarians among us.
Ingredients Zucchini hummus
- 3 courtyard peeled zucchini
- 60g tahini (the one I used has 4.5g carbs per 100g)
- Olive oil
- 1 tablespoon ground cumin
- Salt pepper
Preparation
- I like to roast zucchini because it gives it a really nice flavor, but if you don’t have time you can just skip this step.
- Preheat the oven to 200 degrees. Cut the zucchini in 2 and place them in a baking dish. Brush the top with olive oil and salt. Put it in the oven for about 10 minutes, but keep an eye on it.
- Place all the ingredients and the grilled zucchini in a food processor and blend until smooth. Add salt and olive oil to taste.
- Store them in the refrigerator and enjoy them afterwards !
- You can serve the hummus with low-carb crackers or low-carb vegetables.
