Keto hazelnut cake

Cake is a perfect addition to the weekend, isn’t it ? Today we have a keto hazelnut cake with chocolate buttercream. It’s sugar free, clean, low carb and of course keto ! But be careful, this cake is also very high in calories and suitable for Catarina’s, because it devours an entire packet of butter, cream and nuts.

Use an 18cm springform pan for this recipe.

Ingredients for the dough :

  • 150g hazelnuts – to crush yourself
  • 50g almond flour
  • 2 eggs
  • 80g soft butter
  • 2 teaspoons of baking powder
  • 30g  of erythritol
  • 20g  vanilla collagen with MCT

for the buttercream :

  • 100g butter
  • 100ml of cream
  • 15g chocolate powder for boiling pudding
  • 20g cocoa mass nibs

Ingredients for the glaze :

  • 20g cocoa butter
  • 30g cocoa paste nibs
  • 5 drops of nougat drops
  • 10ml  MCT oil

Preparation Keto hazelnut cake

  1. Grind the hazelnuts in a food processor to crush them
  2. Beat the eggs with the erythritol until frothy
  3. Melt the butter and add it to the other ingredients and mix until you have a paste. A firm mass forms
  4. Line a mold with parchment paper
  5. Bake the base for about 20 to 30minutes at 175°C (top/bottom heat).After 20 minutes, check with a chopstick and cook for another 5 or even 10 minutes. Stay with the oven and set the temperature. It must not turn black
  6. Let it cool
  7. Cut the top half

Continue with the buttercream.

Preparation :

  1. Mix the pudding powder well with the cold cream, it doesn’t dissolve well, so mix it in
  2. Let it boil briefly for a few moments. Meanwhile, continue stirring . It cooks easily or it burns
  3. Wait for the mixture to thicken, then lower the heat
  4. Add the butter and the cocoa mass nibs and let melt. Do not boil further.
  5. Pour the mixture over the dough, let cool and put in the refrigerator
  6. After about 1-2 hours, cut the cake along the edge of the cake ring and remove the cake ring
  7. Now place the lid on top and frost
    The topping is MCT chocolate frosting.

Preparation :

  1. Melt the two shards together (in Bain Marie)
  2. Add the drops
  3. When the chocolate is melted, stir in the MCT oil first
  4. Pour the icing on the cake
  5. Eat immediately or refrigerate
