Ingredients :
- 1 C. to s. butter.
- ½ cup (60 g) frozen cranberries.
- 3 tbsp. To s. (36 g) monk fruit sweetener
- ¼ tsp. To c. cinnamon
- 2 whole cardamom pods
- 1/8 tsp. To c. ground nutmeg
- ¼ tsp. To c. ground ginger
- 3 tbsp. To s. water
- The zest of an orange
- 1 round of brie (220 to 250 g), with the rind, at room temperature
Instructions :
Cranberry sauce :
Add butter, cranberries, sweetener, cinnamon, cardamom, nutmeg, ginger and water to a saucepan and bring to a boil. Reduce the heat to medium-high, cover the pot, and simmer until the cranberries are slightly soft, about 6-8 minutes. Check often and stir the sauce. Add the orange zest and stir. Let simmer uncovered for 1 additional minute. Using a small spoon, remove the cardamom pods (if using). Let cool slightly for a few minutes before adding the brie sauce.
Preheat the oven to 180°C.
Baked brie :
Transfer the brie to a baking sheet lined with parchment paper. Spoon the cranberry sauce over the brie and place the baking sheet in the oven. Cook until desired, about 5-10 minutes, monitoring closely after the first 5 minutes.
Final Steps :
Garnish the baked brie with a sprig of fresh rosemary. Transfer the cheese to a serving board and serve with crackers, raw vegetables, berries, slices of procuitto and olives.
