- 60 g of sugar
- 60 g of soft butter
- 2 eggs
Realization :
1/ mix all the ingredients: almond powder, sugar, butter and eggs.
2/ Unroll your first puff pastry and arrange your preparation. Don’t forget to hide the bean! Then, cover with the second puff pastry.
3/ firmly stick the edges of the puff pastry together. You can use a fork to help you. Brush your pancake with egg yolk, make the decorations you want with the point of a knife and make a small hole in the center of the pancake (to let the moisture escape).
4/ bake for around 25 minutes at 200°C. Monitor the cooking.
THE GOURMET CAKE
Ingredients for chocolate king cake:
- 2 puff pastries (I get them from Picard for their great composition!)
- 50 g of almond powder
- 100 g of 60% chocolate
- 40 g of sugar
- 40 g soft butter
- 40 g of 15% liquid cream
- 2 eggs + 1 egg yolk
- 1/ heat the cream until boiling then pour it over the chocolate pieces. Mix well. Reserve.
- 2/ mix the butter and sugar then add an egg and the almond powder. Finally, add your cream/chocolate mixture.
- 3/ roll out a puff pastry, place your preparation on the bottom, leaving edges 1.5 cm wide. Don’t forget to hide the bean!
- 4/ cover with the second puff pastry. Glue the edges together firmly. You can use a fork to help you. Brush your pancake with egg yolk and leave to rest for 45 minutes in the fridge.
- 5/ Remove from the refrigerator, create the decorations you want with the point of a knife and make a small hole in the center of the cake (to let the moisture escape).
- 4/ bake for around 25 minutes at 200°C. Monitor the cooking.
THE LIGHT PATTY
Ingredients for apple galette des rois:
- 2 puff pastries (I get them from Picard for their great composition!)
- 500 g applesauce without added sugar + 3 fresh apples
- 1 tablespoon of sugar
- 1 teaspoon of cinnamon
- 1 tablespoon of flour
- 1 egg yolk
Realization :
1/unroll a piece of puff pastry, place the spoons of flour and sugar on the bottom of the pastry. Mix the compote with the cinnamon and cut the fresh apples into pieces. Then place the applesauce and the pieces of fresh apples on your puff pastry.
2/ don’t forget to hide the bean! Cover with the second puff pastry.
