- 400ml of water
- 450g of mushrooms
- 1 small onion (around 50g)
- 40g parmesan cheese, grated
- 100ml cream (35% fat)
- 25g butter or Ghee
- 1 vegetable stock cube
- Nutmeg, grated
- Lemon juice
- Salt and pepper
- Thyme, fresh or dried
- A few green onions, finely chopped
Preparation Creamy keto
- Rinse the mushrooms and slice them. Chop the onion.
- Heat the ghee or butter in a frying pan over medium heat and sauté the onion and mushrooms with the thyme until soft. Stir regularly : the onion should only become golden brown and not burnt.
- Add the water, the stock cube and a squeeze of lemon juice. As soon as the water starts to boil, let the mushrooms cook for another twenty minutes.
- Remove the pan from the heat. Reserve a few pieces of mushrooms for garnish. If a sprig of fresh thyme was used, you can remove it. Add the cheese and puree the mixture using a blender. If the soup becomes too thick, just add a little more water.
- Add the cream and heat the soup without bringing it to a boil. Don’t stop stirring. Don’t hesitate to season to your liking with grated nutmeg, salt and pepper.
- Serve in 2 bowls or plates, garnishing with the pieces of mushrooms you kept aside and sprinkling.
